Florida Seafood Gumbo

The spicy-hot seasoning is what makes this gumbo tick! Yum!

¼ pound salt pork, diced

½ cup Vidalia or sweet white onion, diced

1 cup fresh okra, sliced

2   10-ounce cans tomatoes with juice, diced

1 teaspoon fresh thyme

1 ½ teaspoons fresh ground black pepper

1 pound medium size raw shrimp, cut in pieces

¼ hot habañero peppers, seeds remove, then chopped

Salt to taste

Fry salt pork until brown. Remove from pan and reserve.

Add onions to rendered fat. Sauté until translucent. Add okra. Stir 10 minutes.

3.

Add remaining ingredients and pork. Simmer 20 to 30 minutes.

4. Serve over rice. Garnish with lemon wedges and parsley.
