Florida-Style Broiled Snapper
|

Here’s a simple way to enhance the flavor of fresh fillets. Serve with boiled new potatoes, buttered and parsleyed, or with buttered noodles. You can use any firm white fish if you cannot find snapper. The Dainty has closed but this memory lingers!

| 4 6- to 8-ounce fillets of fresh red snapper |
|
1 large onion, thinly sliced
|
|
Cracked black pepper
|
|
1 teaspoon dried oregano, crushed
|
|
1 teaspoon paprika
|
|
Juice of 1 lemon, lime or 2 Key limes
|
|
Extra Virgin olive oil
|
|
3 teaspoons fresh chopped parsley
|

Place fillets in a large buttered baking dish. Add onions. Sprinkle very lightly with pepper, oregano, and paprika. Add lemon juice and olive oil. |

Bake at 350° F. until fish flakes, about 10 to 15 minutes. Garnish with fresh parsley and serve hot. |
