Yearling Florida hushpuppies

Old-fashioned goodness from Cross Creek at The Yearling Restaurants, compliments of the first owners, the Herbert family
|

2 onions, chopped
|
|
1 ¼ cups self-rising corn meal
|
|
2 ½ to 3 ounces grapefruit juice
|
|
1 tablespoon baking powder
|
|
1 ½ cups self-rising flour
|
|
¼ cup plus 1 tablespoon sugar
|
|
Frying oil
|

Mix all ingredients except oil together. Mixture will be dry. Coat top with oil. Let rise 30 minutes to 1 hour.

Shape into walnut-size balls. Fry in oil, taking care that the inside cooks and the outside is golden brown.

Sprinkle with sugar.
|
|
|
|
Yield: 3 to 4 dozen
|
